I must say, I love a good sandwich. It must contain the right portions of meat, veggies, cheese and spread. It has to sit between two great pieces of bread, thick and hearty. So, I saw Brooke from the Plum Pie had made Cranberry Pecan Chicken Salad and I couldn’t pass it up. I’ve made it several times in the past, so I thought I would share the sandwich heaven.
This is so good. The combination of chicken, Greek yogurt spread and cranberries is outstanding. The addition of apples make it a true chicken salad sandwich. I omitted the pecans and shallots. I’m not a big fan of nuts on my sandwiches.
